After 2 years of testing, we're now firmly in agreement with Paula Wolfert and many other food experts that food cooked in clay pots really does taste better.
Flameware is a completely different type of cookware from our standard stoneware pottery. Stoneware can be used in the oven where heat surrounds the pot, and in the microwave. Flameware Ceramic Cookware, on the other hand, can be used on a direct flame as well as in the oven and microwave. It is made completely of ceramic not just a coating.
You'll find it cooks a bit differently since ceramic is an insulator. This means you need to slow down a bit. Let the pot come slowly up to temperature, rather than turning the flame high and then backing it off. The reason for this is that as an insulator, once the heat goes in, the pot stores it, releasing it to the food more slowly.
